Since Valentine's Day is on a Saturday this year, this might be the perfect breakfast in bed for your sweetheart. This is a delicious chocolate pancake and with a little extra effort can be made into something really special.

2 cups all-purpose flour
1 cup powdered sugar
1/2 cup unsweetened cocoa
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
2 large eggs
1/2 cup granulated sugar
2 Tablespoons red food coloring
Powdered sugar for garnishing
Sift first six ingredients into a large bowl. Set aside.
In another bowl, mix buttermilk, eggs, granulated sugar, and food coloring.
*If you don't have buttermilk handy, pour 1 1/2 Tablespoons of lemon juice into a 2 cup measuring cup. Fill with milk to the 1 1/2 cup line. Let sit for 5 minutes.
Gradually add wet ingredients into dry. Whisk together until smooth.
Pour batter into a squeeze bottle so you can make hearts or any other shapes you desire.
Draw the outline of the heart in the heated pan.
Fill in with batter. Flip when the top is covered with bubbles and the edges look cooked.
Top with powdered sugar, butter, and your favorite flavored syrup. Strawberry syrup is a favorite of mine for these pancakes. You can dress them up however you like to make the perfect breakfast for your Valentine.
