For the first recipe of 2015, I've found a simple and delicious pasta recipe bound to tempt your tastebuds.
Recipe adapted from Rasa Malaysia.
4 servings linguine, for 4 people
1 lb shrimp, peeled and deveined
1/4 teaspoon cayenne pepper
2 oz unsalted butter (1/2 stick)
1 1/2 tablespoons olive oil
5 cloves garlic, peeled and minced
5 tablespoons white wine
6 cherry tomatoes, cut into halves
Salt, to taste
1/4 teaspoon sugar
Squirts of lemon juice
1/2 heaping teaspoon freshly ground black pepper
Shaved Parmigiano Reggiano
Prepare Linguine according to package directions. Set aside.
Sprinkle cayenne pepper over shrimp and set aside.
Heat sauté pan and add butter. Once butter is melted, add olive oil and minced garlic. Lightly sauté.
Add shrimp until halfway cooked (slightly pink).
Then add white wine, salt, and sugar.
Add cherry tomatoes and linguine to the pot and stir until linguine is completely coated. When shrimp is cooked through, add a few squirts of lemon juice and black pepper. Mix well.
Dish out and serve with shaved Parmigiano Reggiano. Enjoy!
