The characters from my novella, Holiday Cure for the Cursed, meet in a coffee shop while sharing a fondness for Peppermint Mochas. Something that would pair beautifully with CiCi and Daniel's favorite drink is the cookie version. I've taken a few different recipes and mashed them up to bring you my newest cookie creation, Holiday Cure Peppermint Mocha Cookies!
2 1/2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 cup unsalted butter, softened
1 cup sugar
1/2 tsp vanilla extract
1 tsp peppermint extract
3 tbsp milk
1 tbsp green food coloring gel
1 tbsp shortening (like Crisco)
1 cup Andes creme de mint chips
Sift flour, baking powder, and salt together in a bowl and set aside.
Cream butter and sugar together in separate bowl. Add egg, vanilla, peppermint, and milk. Mix until combined. Gradually add the dry mixture and stir until completely incorporated.
Remove half the dough and place on flat surface with a little powdered sugar sprinkled on it. Form the dough into a ball. Make a small divot in the middle of the ball and add food coloring. Knead the dough until color is spread throughout the dough. Can add more food coloring until desired color is reached.
On a sheet of wax paper, roll out your colored dough into a large rectangle about 1/4 inch thick. Do the same with the uncolored dough on another sheet of wax paper. Slide colored dough on top of uncolored dough and slip the wax paper out from between the layers. Trim edges to make the layer the same size.
Roll into a log to create a swirl effect. If dough starts to tear while rolling, don't worry. Use your fingers to smooth it back together or use some of the dough you trimmed off to patch it. Wrap log tightly in plastic wrap and chill in the back of the refrigerator for 2 hours.
Once chilled, slice cookies to desired thickness. (Thinner cookies = less baking time) Cookies shown are about 1/4 inch thick. Place sliced cookies on parchment paper lined tray and bake at 375 degrees for 10 - 15 minutes. Cool completely before coating with chocolate.
To melt Andes creme de mint chips, place in microwave safe bowl with 1 tbsp shortening. Heat in increments of 30 seconds, stirring between each, until completely melted.
Take a cooled cookie and dip half of the top in the melted chocolate. Place on wax paper and let set. Enjoy with your favorite holiday beverage.
